Pumpkin and Flaxseed Meal Muffins

1 1/2 Cups Wheat Flour

3/4 Cup Flax seed Meal

1 Cups Brown Sugar

2 tsp Baking Soda

1 tsp Baking Powder

1/2 tsp Salt

2 tsp ground Cinnamon

1 1/2 Cups Canned Pumpkin

1 Cup Applesauce

3/4 Cup Milk

2 Eggs

1tsp Vanilla


2/3 Cup old-fashioned oats

1/4 cup firmly packed brown sugar

1 tsp cinnamon

2 TBSP Butter melted

Combine all muffin ingredients and spoon into 18 to 24 cupcake liners.   In separate bowl combine topping ingredients and  Sprinkle topping on each muffin.  Bake at 350  degrees for 30 minutes .


Buttermilk Pumpkin Pancakes



  • 1 C Buttermilk
  • 1 C Whole Wheat Flour
  • 1 Egg
  • 1/2 C Pumpkin
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 C oil
  • 1/2 C water

Mix well.  Pour 1/4 C batter into heated pan or waffle iron.  Cook until bubbles appear on top side, then flip.  Cook for 1 minute or until golden brown.

Yesterday I tried making healthy pumpkin cookies.  They turned out OK, but not great.  The frosting, however, was pretty good!!

Sugar Free Pumpkin Frosting

  • Half Pint of Whipping Cream, beaten stiff
  • 1 tsp vanila
  • 1 tbsp stevia
  • 1/3 C pumpkin
  • 1 1/2 tsp pumpkin pie spice

Fortunately my kids actually ate the cookies once I frosted them!  I will keep working on a fabulous clean pumpkin cookie and post it ASAP!


Spider Web 7 Layer Dip

Everybody has a favorie 7 layer dip recipe, and you can do this with whatever recipe you love.  You can find mine below with non fat refried beans and non fat sour cream.  The fun thing is to create a spider web out of sour cream.

1 (31 oz can)  non-fat re-fried beans

1 package taco seasoning

1 1/2 cups non-fat sour cream

2 cups guacamole

1 (24 oz) medium salsa

1 cup shredded cheddar cheese

3-4 roma tomatoes, diced

s&p to taste

Tortilla chips

Mix taco seasoning with re-fried beans and spread on the bottom  of a glass casserole dish.  Layer 1 cup sour cream, salsa, and guacamole.  Put the remaining half cup sour cream in a baggie and cut a small hole in the corner (the first hole i cut was too big so be sure to keep it pretty small).  Create a web shape on top of the quacamole.  Sprinke cheese and diced tomatoes on the outer edges.

Serve with tortilla chips

Easy Halloween quesadillas


Seriously, it doesn’t get easier than this!


Two whole wheat tortillas

Cheddar or Mexican blend cheese


Sprinkle cheese on first tortilla.  Cut a  spooky jack-o’-lantern face into the second tortilla with a sharp knife. Place on top of the tortilla with cheese and microwave until cheese is melted.


I thought of adding guacamole  to look like brains or salsa to look like blood but I didn’t know if my kids would eat it! 😉
